First recorded in 1494 in the Scottish Exchequer Rolls, where a friar named John Cor was granted malt to make 'aqua vitae', whisky evolved over subsequent centuries through refinements in pot still distillation, the introduction of the continuous Coffey still in 1831, and the discovery that ageing in oak casks transformed the raw spirit into a drink of remarkable complexity and depth.
