Apricots with Amaretto

From the 18th century, it became a cherished tradition to preserve fruits at the peak of their ripeness in fine spirits, creating ‘brandy fruits’, luxurious confections that captured the essence of summer for enjoyment all year round. These indulgent halved apricots are steeped in Amaretto, a liqueur thought to have been created in 1525 when a Saronno innkeeper soaked apricot kernels in brandy as a gift for Renaissance painter Bernardino Luini. Perfect as an elegant gift, they pair beautifully with creamy cheeses such as mascarpone or ricotta, tangy options like aged goat cheese or Manchego, and complement dark chocolate or roasted nuts that echo the almond notes of Amaretto. They also enhance desserts such as panna cotta, custard, or tarts, and are delightful served alongside dessert wines like Vin Santo or Sauternes, or with a cup of rich espresso.
